Mona Lisa Vito: [Vinny looks at her funny] What?
Vinny Gambini: Nothing. You stick out like a sore thumb around here.
Mona Lisa Vito: Me? What about you?
Vinny Gambini: I fit in better than you. At least I'm wearing cowboy boots.
Mona Lisa Vito: Oh yeah, you blend.

**My Cousin Vinny, 1992**

i just wanted to share this recipe with you because it shows that i can be blend in with the locals! i even wear my cowgirl hat when i make this for the family!
giddy up!

bbq southwestern chicken salad
8 cups shredded lettuce
½ cup canned black beans, rinsed and drained
½ cup canned corn (we never use this, but it calls for it.)
½ cup ranch dressing
2 cups chopped cooked, boneless, skinless chicken breast
½ cup bottled bbq sauce
2 cups thin jicama strips (don’t use these either)

put lettuce, black beans, corn and ranch dressing in a large serving bowl and toss. in a small mixing bowl, stir together the cooked chicken pieces and BBQ sauce. serve salads individually, with about 2 cups of the lettuce mixture, topped with ½ cup of the chicken mixture and jicama strips

I loved "My Cousin Vinny". What a classic show.

Loved your recipe although I must confess I don't think I've ever had jicama.

Wow, that's the second time I've seen My Cousin Vinny quoted in the last 2 days. Weird!

That sounds really good! I think the jicama would add some good crunch.

Yes, this is a yummy recipe, made it a week or so ago! Added tomatoes to it and left out only the jicama. Thinking a some sliced corn chips (like the restaurants do)would be a good addition too.

Thanks for sharing! I am going to tag this recipe to try out one evening!

Thanks for your comment on my Tour de France post today! Are you and your hubby cyclists or just like watching? I got pushed off the road last night by an SUV! I couldn't believe it! First time that's happened!!

Erm... I hate to show my ignorance, but I had to Google jicama? I've definitely never eaten it.

What a totally fun stop on our little journey through Alphabe-Thursday's Letter "Y"!

That is one of my favorite movies. Ever. If I am down that is the first movie I yank out. And even though I know it by heart that is one of my favorite lines!

Your recipe sounds perfect. Maybe you could line your cowboy hat with saran wrap and serve it inside. Sounds perfect to me!

Thanks for this smile!

Yippee i-o-kay - ay!

Hmmm.... That was supposed to sound like a cowboy word but it might not have translated as well from the inside of my head to the outside!

Thank you for linking!

A+
